Tasty Tuesday – From Kisha’s Kitchen to yours!

A great friend of mine and fellow health and wellness enthusiast, Kisha Garcia, author of Fresh Fit Life, is an AMAZING cook. Just seeing pictures of what she’s concocted will make your mouth water. Best part of it all? It’s super good for you too. So even though she’s thousands of miles away and I miss her terribly, I wanted to share a little piece of one of my favorite parts of Kisha – her cooking skills.

I can’t even tell you how much I LOVE polenta. I found this recipe in the October 2011 issue of Muscle & Fitness Hers.  I did adjust the recipe to what I had at home.  Ah, the magic of cooking!



Italian Chicken & Polenta Casserole 
18oz precooked “tube” polenta
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp thyme
2 diced Roma tomatoes
1/2 cup all-natural marinara sauce
2 tablespoons red wine vinegar
10 oz cooked chicken breast, cut into bite-size pieces
1/4 cup low-fat ricotta cheese
1/4 cup part-skim shredded mozzarella
1. Preheat oven to 400 degrees.
2. Coat medium pot with cooking spray and place on medium heat. Add garlic, oregano, and thyme. Cook for one minute, being careful not to burn the garlic (stir!).  Stir in tomatoes, marinara sauce, vinegar, and chicken. Bring to a soft boil, then reduce heat and cover, simmering for 15 minutes.
3. Meanwhile, slice polenta in 1/2 inch slices. You should end up with 9 slices, not including the end pieces. Coat an 8×8-inch baking dish with cooking spray and place slices in a single layer.
4. Spoon half of the sauce mixture over polenta. Drop ricotta cheese by the teaspoon over sauce. Add remaining sauce and sprinkle with shredded mozzarella.
5. Bake covered with aluminum foil for 15 minutes. Remove foil and bake an additional 10 minutes.
6. Enjoy!

Thrifty Thursday - A Valentine's Day for One

This year, I am without a Valentine. So instead of participating in Singles Awareness Day (S.A.D.), a day chock full of misery and despair, I decided to treat myself extra special for the day. Lots of restaurants are going to have great deals on dinner for two, and that’s fine and dandy, but I’m not in the mood to hang around a whole bunch of sappy couples. I’ll be enjoying an at-home spa day instead.

The first step is to plan your day. Well, mine won’t be a whole day, but more like an evening, consisting of a facial, body scrub, hair treatment, a hot bath, and a yummy and healthy dinner. If you have the ability to make it a whole day, throw in an early morning workout and plan healthy meals throughout the day. Prepare yourself for your day. Make sure your favorite robe, PJs, slippers, and workout clothes are clean and put somewhere easy to get to. Pull out your favorite candles and dim the lights in your bathroom and bedroom. Have clean sheets on your bed and your fluffiest towels right by your tub. Spray them with your favorite fragrance and indulge in your senses.

Next, prepare your treatments. You can do a search for different treatments or just visit The Spa Index to browse recipes and find whatever floats your boat. Here are the ones I’m going to be enjoying:

For the face, a Honey Oatmeal Facial, courtesy of The Spa Index:

1/4 cup plain yogurt or buttermilk
1/2 cup oatmeal
2 tablespoons of honey

Finely grind or process the oatmeal in a blender or food processor. Set aside. In a small bowl, stir together honey and yogurt, and then add ground oatmeal. Mix thoroughly until a smooth paste consistency has been reached. Smooth over your face and neck, leave on for fifteen minutes, and rinse off with warm water.

For the body, I was given a homemade body scrub a while back, so I’ll be using that, but this recipe is very similar:

2/3 cup brown sugar, packed
1/3 - 1/2 cup almond oil
1/2 tsp of vitamin E
45-60 drops of fragrance or essential oil

Mix almond oil, vitamin E and fragrance or essential oil together in a glass bowl. Add the brown sugar and mix in well. Gently scrub over skin, focusing on rougher areas, such as elbows, feet, and knees. Rinse with warm water and pat dry.

For the hair, I’m actually using a sample from Lush called Hair Doctor, but this is one that my friends and family frequently use:

1 banana
3 tbsp honey
1/2 cup olive oil
1 vitamin E capsule
2 tbsp of Mayo

In a small bowl smash up one banana and add the honey, olive oil, mayo, and then empty the vitamin E capsule into the bowl. Stir with a spoon. Mix it all together really well. Then pour all of the contents of the bowl into a blender and puree till creamy and smooth. Leave in hair for 30 minutes and then rinse.

I can’t help buy indulge myself just a little bit. So I bought everything that I needed to make Mermaid Water. The Big Blue Bath Bomb was $6.35 and the Sunny Side Bubble Bar was $6.95, and I know I’m going to get at least three baths out of them, so that’s a good deal. And finally, I’m going to jazz up what’s already in my freezer and make a petit steak dinner with rosemary roasted potatoes and steamed veggies. Valentine’s day seems like a great day to show love to the one person on the planet who deserves it the most… YOURSELF!

JT's Bringing Sexy Back to Target - The Review

Earlier this month I told you about a much anticipated diffusion line for one of my favorite stores on the planet, William Rast for Target. And now it's on clearance! Oh, how I love those little red tags... Since the Target near me is running low on inventory, and because I know that diffusion lines never make it past the 50% off rack, I figured it was now or never on trying the line on for size (in more ways than one).

Anyone who's anyone knows that William Rast jeans are the closest thing you will ever find to the Sisterhood of the Traveling Pants pants. The word on the street is that the original William Rast jeans that normally cost $200 fit every body type like a glove. So of course, budget conscious fashionistas were hoping that the diffusion version could hold a candle to the high-end pairs. Fortunately for our wallets, they are nearly identical, right down to the "W" stitch in the back pocket.

One of my friends gave me a heads up about the sale and raved about how wonderful the jeans fit. She's got a little more junk in the trunk than I do (and I'm jealous of that fact, by the way), so if they fit her perfectly, I was worried they wouldn't magically add something where there wasn't much. But, then, when I zipped up the skinny jeans and took a look at my backside, it looked phenomenal! I didn't know that a pair of jeans could do what a Booty Pop does without the padding. Needless to say, I was in love. Then I put on the boot cut jeans and the balance it created as incredible. The extra long length (all that were left were 34" inseams) is it perfect for my super high heels. I was in love again. And who could resist the $24.98 price tag? Down from $49.99, and nearly identical to its $200 predecessor, they most definitely get this Budgetista's seal of approval.

Pretty Boy (or Girl) Swag, FancyLo Style

They say "Don't judge a book by it's cover," but let's be real. When you're walking through Barnes & Noble, what makes you stop and browse through a novel you've never heard of before? The cover! The same same applies to people and their appearances. A well dressed person is more likely to spark the interest of those around them than someone who takes no pride in the way they look. "But it's the weekend... Why should I dress up on my day off?" Because you never know you're going to run in to.

Many of us have our normal nine to five, to which we give 110% Monday through Friday. But once it hits 5:01pm, our focus turns to our own pursuit of success. Since the world's down time is our grind time, we are constantly at work, but during those off hours, we get to be the boss. To those of you who morph into Super-CEO the minute you clock out, ask yourself "What does my weekend wardrobe say about me?"

I have a colleague who I love dearly. She has a vibrant spirit and a killer work ethic. But, up until recently, I would see her at the office looking like she had given up on herself. She's so exhausted by the daytime job, her MBA, and her own grind that she opts to hide from the world behind frumpy garb rather than take the time to unleash her inner diva. "I set out something fabulous the night before, but when I wake up in the morning, I just don't feel like making that effort anymore," she told me. With a closet full of Cole Haans, Stuart Weitzmans, and Michael Kors, she defaults to cheap flip flops and oversized sweaters that do nothing for her. She would swear up and down that she was what she likes to call FancyLo - low maintenance, but still put together. But unfortunately, her look was taking "Lo" to a whole new level. Borderline "Sloppy", actually. The more we got into our conversation, the more I realized that I wasn't seeing the half of it. If this is how she presented herself during the work week, then how on earth was she carrying herself on the weekends?

This got me thinking. How do you pull off "low maintenance" without looking like a hot mess? First, we have to start by putting your sweats where they belong - next to your gym bag and/or your cleaning supplies. Next work on your closet and make it easy to navigate. Section it off in three parts - Daytime (work), Evening (play) and Weekend (relax). Each section should make one cohesive statement about who you are, where you're going, and what you're going to do when you get there. Since weekends are normally a time to kick back and relax at your local coffee shop and work on your boss status (assuming you're like the rest of us), stock your closet with über comfortable basic pieces that say "I care about myself and my work and so should you." Skip the tailored shirts and slacks you wear all week and opt for well fitting tees in a natural material (both long and short sleeved), laid back oxford shirts, comfy sweaters, relaxed cargos, breathable leggings (for the ladies, of course), and a great pair of jeans. Stick to neutral colors to you can grab and go without having to put much thought into how things go together. The great thing is that a lot of these essential pieces are not expensive at all and you can stock up without breaking the bank. Ladies, finish off the look with a pair of adorable ballet flats, gladiator sandals or riding boots. Gentlemen, depending on your personal style, go for boat shoes, casual sneakers that show off your personal style (like Pumas or Nike SBs), or just stick with a classic and throw on a pair of Chuck Taylors. Bottom line, your weekend wear should be chic, simple, but always put together. Sometimes, less really is more.

In the great debate about the definition of FancyLo, my colleague argued that I was far to Fancy and I didn't have a Lo bone in my body. I couldn't disagree with her more. Just because I like the finer things in life doesn't mean I won't go grab brunch in a sweater and leggings (à la modern Flashdance) with little, if any, makeup. I just want my exterior to always reflect my interior. And until this conversation, she wasn't letting her amazing personality and talent shine through her wardrobe. The next day, when I saw her at the office, she looked adorably laid back - hair done in a chic pony tail, a simple but well fitting black sweater, and a printed A-line skirt. And now I know her weekend wear was equally as sophisticated. I couldn't have been more proud. She finally understood what I had been fussing with her about for weeks. If you look good on the outside, you'll feel good on the inside.

Everyone has a little FancyLo in them. I do it city style. She's all California girl. Midwesterners add their own flavor to it, etc. The point is that FancyLo should never be just Lo. There should always be some effort put into your effortless look.

So as we kick off the weekend think about what you're about to throw on to run your errands. If you were to meet who could become your best client, would you feel good about the impression you made when you handed him or her your business card? Marinate on it and have an awesome weekend!
